Possum Pie Anyone?

Greetings and Holykisses,

For fun, I made a possum pie yesterday. - No worries... I didn't make it out of the one who gave me a fright on the porch thee other night. lol When I made this pie, I revised the recipe a little but I'll give you thee original as well.

Possum Pie

2 packages of cream cheese- softened (I used fat free)
3/4 cup powdered sugar
1 graham cracker shell- (I use Pillsbury Allready pie crust instead)
1/4 cup chopped pecans (I only used 12 pecan halves lol)
1 and 3/4 cups milk
3/4 teaspoon vanilla extract
1/4 cup instant vanilla pudding mix (I use sugar free)
1/3 cup instant chocolate pudding mix (I used sugar free)
1/2 cup heavy whipping cream whipped ( I used a whole tub koolwhip instead)
12-16 pecan halves for pretty ( I omitted them)

I baked my pie shell, and then
In a small bowl beat cream cheese and pwd sugar til smooth. Spoon into crust and
sprinkle with chopped pecans.

In a bowl, whisk the milk and measurements of pwd puddings. Let stand a couple
minutes til it starts to set up and then spoon over the cream cheese mixture.

Put in fridge and let set and then top with whip cream and garnish with
the pecan halves if you like.

We used to have a Diner not far from here but is now closed. Mike and I used to share a slice of possum pie for dessert there. Well, when I made this pie yesterday, I didn't mix the cream cheese and pwd til smooth. I don't know if it was because I used fatfree cream cheese that made it kinda lumpier than usual, but I did mix it up by hand instead of using the mixer. I was in a hurry so I decided I'd mixed it well enough and poured it into the pie shell. Myguy does NOT like pecans so I chopped up 12 pecan halves reeeeally small -- I mean almost pecan DUST! I should have left them all out, but I really didn't think he'd notice. ~ We had our dinner... and Trent ate with us last night as well. I watched while Myguy starts in on his piece of pie. I watched him eat the first couple bites. He seemed normal, but then got a taste of nut.* He made a face and then started poking around with his fork "looking" in his pie. It was about then, he noticed how weird the cream cheese looked. I started gigglin; I couldn't help it... coz I just knew..............* Afterall, we've been married 27 years. Then he says, ..."What kinda nuts are in here... and DID YOU PUT COTTAGE CHEESE in this?!!!!!!!" He LOATHES cottage cheese. It was hilarious. I started laughin all the harder and the man really thought I had put cottage cheese in the pie. I told him it had very few nuts in it- 6 whole pecans to be exact ...but he would not eat anymore. I told him the Diner used to put pecans in their possum pies too, and he ate that! He said, "No they did not!" lol He asked what that stuff was on the bottom layer, and I told him truthfully... everything in the pie. He's just sure the Diner only had chocolate pudding and whip cream in their possum pies. Trent tried to tell him, "Dad, that would be a chocolate pie." :)

I'm pretty sure he still thinks there was cottage cheese in his pie. lol So yall.. learn from me and mix til SMOOTH like the recipe says. :)
Just so you know... Trent and I loved it. It's good pie! Guess I'll have to make Myguy a pumpkin pie to make it up to him. I hope you try this though! It really is yummy.

Have a great day!
holykisses xoxo

I'm going to copy this and make it when we get back home.

LOVE YOU!

Ahi poke...Ahi is tuna

Ok, are you ready for this because I just about wasn't, I had to turn my back and make sure I was over the trash can in case I had gag reflux.

Ahi poke

is raw Ahi tuna, cut into nickle size pieces that have been marinated in a soy sauce mixture with sliced onions and green bell peppers. And you eat it just like that. Oh yes, Mam.

I have NEVER heard of a pie called this before !!! lol Sounds good though and I would have to put pecan dust in mine too cause of the kids not hubby. My mil has pecan trees in her yard in southern AR and keeps me in full supply.
